Abstract
Dewasa ini masyarakat lebih memilih udang beku yang sudah dipisahkan dari kulit dan kepalanya. Proses pemisahan menyebabkan jumlah limbah kulit udang yang semakin melimpah dan semakin tercemarnya lingkungan. Kulit dan kepala udang umumnya hanya dibuang ketempat pembuangan tertentu atau hanya digunakan sebagai pakan ternak. Kulit udang yang melimpah dapat dimanfaatkan menjadi kitin yang banyak manfaatnya di dunia industri saat ini. Penelitian ini bertujuan untuk mengisolasi kitin melalui proses dekolorisasi, demineralisasi, deproteinasi serta dilakukan karakterisasi menggunakan FTIR. Hasil yang diperoleh berupa serbuk kitin berwarna putih kekuningan, tidak berbau, % rendemen sebesar 46,97 % dan derajat deasetilasi sebesar 43,24 %.
