Abstract
Kandungan vitamin E dalam tauge dapat sebagai antioksidan. Tujuan penelitian ini, didapatkannya formula nanoemulsi tauge kacang hijau. Nanoemulsi ini terdiri dari minyak, tween 20, dan PEG 400. Metode yang digunakan, dengan skrining kelarutan 12 minyak dan optimasi nanoemulsi dari berbagai parameter evaluasi yaitu, ukuran partikel, PI, zeta potensial. uji organoleptis, uji pH, dan uji KLT. Hasil uji KLT menunjukkan dalam ekstrak positif terkandung vitamin E. Hasil dari skrining dan optimasi nanoemulsi dengan formulasi minyak terpilih (minyak Capryol dan minyak Arachidis), menunjukkan hasil yang baik dengan berdasarkan ukuran partikel formula 1 hingga formula 5 dan formula 7 hingga formula 9 menunjukkan nilai 16.5333 nm – 852.5333 nm, dan semua formula menghasilkan nilai PI 0.2827 Ð - 0.6893 Ð, serta nilai zeta potensial ditunjukkan oleh formula 6 dan formula 7 yaitu -35.6 mV dan -37.9333 mV. Hasil ini menunjukkan dengan menggunakan minyak Capryol dan minyak Arachidis memiliki sifat yang baik sebagai serum nanoemulsi
