Abstract

Dewasa ini bisnis pada industri coffeeshop sedang mengalami peningkatan yang pesat. Coffee shop saat ini menjadi kawasan kegiatan yang banyak diminati oleh para pelaku usaha khususnya yang ada di Kabupaten Sleman. Tujuan dari penelitian ini adalah untuk mengetahui dan menilai ketangkasan dan kemampuan para pelaku usaha coffee shop dalam melakukan strategi rantai pasokan dan inovasi pada bisnisnya dan pengaruhnya pada kinerja operasional. Penelitian ini merupakan penelitian kuantitatif dengan metode yang digunakan merupakan analisis SEM AMOS. Informasi data pada penelitian ini diperoleh dari 125 manajer, pemilik atau supervisor coffee shop di daerah Sleman yang selanjutnya digali menggunakan  kuesioner  dan  dianalisis  menggunakan software AMOS dan SPSS. Temuan dari penelitian ini adalah terdapat pengaruh positif strategi supply chain sebagai pemoderasi antara inovasi dan kinerja operasional di coffee shop.
